Angel Rosado
Good afternoon, my name is Angel Rosado, and I would like to explain how we make Puerto Rican Pique (hot sauce), or Creole hot sauce, as we call it.
We are going to need some condiments such as pimiento (chili pepper), coriander, vinegar, salt, black pepper, oil, and a bit of sugar.
The process is the following: we cut off the stem off the pimiento, then we cut it by half and place them in a jar.
And that is it! Simply leave it in the jar for a week so that it can cure. For a week, it can be left outside in the sun or at home by a window where the sun can hit it. In a week, it will be ready to use. But remember to add more pimiento because it will need more, and that’s it!
